As Angela always says, "Give, give, get." So, instead of that, I've decided to give you a present...
In honor of Passover and Easter, my mom's recipe for Super Duper Macaroons (though scrumptious any time of year). They're also super easy to make and fun to do with kids.
**Legal Disclaimer: These are NOT diet friendly in any way. Please don't blame me if you gain weight from eating them (but they're worth it)**
Super Duper Macaroons
(easy recipe - no mixer needed)
Ingredients:
2 egg whites
pinch of salt
2 - 14oz bags of sweetened, shredded coconut
1 can sweetened condensed milk
2 tsp vanilla
Directions:
Prepare cookie sheets by lining with parchment paper. Preheat oven to 300 degrees Fahrenheit.
Wisk egg whites and salt for about 2 minutes (until light and frothy). Using a rubber spatula, fold in vanilla and sweetened condensed milk. Add coconut. Mix well.
If you'd like, you can add mini chocolate chips at this point. However, don't be too generous with the chocolate. Use only about 2/3 of a bag or less or they won't stay together.
Dampen hands. (It will be sticky, so re-dampen hands as needed.) Use about 1 ½ Tbsp mixture to form a round haystack shape. Press tightly so that it holds together. Put about 1" apart on cookie sheet.
Bake at 300 degrees for 20 minutes. Check to make sure they don't get too brown (every oven varies). Cool completely on rack before moving off of cookie sheet.
