    Happy Earth Day! 3 Simple Tips for Sustainable Eating

    Earth Day has really come a long way. My husband Andy and I are vacationing in Buenos Aires this week and celebrations of Earth Day are evident here too. It's great to see how much of an international movement it's become.

    The food choices you and I make every day strongly impact our beautiful and troubled Earth. Agriculture has a huge impact on the Earth, for better or worse, so your choices and how you vote with your wallet (or cute purse) makes a difference.

    Done correctly, agricultural practices can heal the Earth, yield more than enough food for the human population worldwide, support a wide range of wildlife and a wide variety of foods, and preserve and protect the Earth for future generations.

    Practiced incorrectly, which it often is, agriculture becomes one of the biggest consumers of energy, generates a lot of the pollution we live with, degrades variety and the very soil we're dependent on, and makes us sick, literally and figuratively.

    Here are some simple & quick tips to eat a bit greener today, to do your part to celebrate and walk the talk on Earth Day:

    * Buy local organic produce. Local, to reduce the number of food miles (how far food travels to reach you) in your fridge. It's estimated that most food travels between 1,500 to 2,500 miles to reach your plate. And organic, to reduce the impact of pesticides and other non-sustainable agricultural practices on you and on our planet. Learn more via a great organization called Sustainable Table here.

    * If you eat meat, commit to Meatless Mondays, to reduce your consumption of red meat in your diet for both health and environmental reasons. Read more about the Meatless Monday movement and its impact on you and the Earth here.

    * Sign up with a CSA (Community Supported Agriculture) plan, to support a local farm(s), eat locally, and more healthfully to boot!
