I am a recently-laid-off University Human Resources Analyst, and I'm taking this opportunity to fulfill a long-standing dream to become a Pastry Chef and open my own business. Step one is Culinary School, and I'll be entering a Baking and Pastry program at the San Francisco Baking Institute in January, 2013. Thereafter I intend to "earn my stripes" by working at an established bakery for 1-2 years, so that I can "learn the business" before striking out on my own.
